Simon Hill is building a rock-hard physique one broccoli floret at a time.

The Australian fitness expert — who also happens to be a millionaire entrepreneur who made his fortune selling tea and coconut vodka — has been making waves with some recent Instagram posts showing off his muscular build.

The catch? He says he built it by following a strictly plant-based diet.

If you want to go vegan, there are ways to follow the diet without sacrificing your fitness goals. (For proof, just ask this vegan bodybuilder.)

“The world’s changing — there are so many options that are plant-based," Hill told Men's Health. "It’s ... no longer this weird thing you have to be quiet about when you order at a restaurant. It’s only getting easier.”

CARBOHYDRATES & LEAN MUSCLE... if that sounds weird to you then read on! ⠀⠀⠀⠀⠀⠀⠀⠀ I've been getting a lot of questions around eating a plant based diet & how to stay lean. A lot of us have been conditioned to think "carbs = weight gain & fat" when in fact that is a gross generalisation & in my view an incomplete sentence. Let me complete it to give context - "any macronutrient (carbs, fat or protein) particularly ones that are processed & micronutrient deficient, consumed in excess will put us into a calorie surplus which then can ultimately cause weight gain." So why don't we see protein and fat as the enemy? We have diets like Keto & Atkins to thank for that - being 'trendy' we are tricked into thinking carbs are the enemy when in fact most foods contain all 3 of these macronutrients. Surplus food is what causes weight gain - the trick is knowing how much food your body needs, eating great quality nutrient dense whole foods & not over eating. ⠀⠀⠀⠀⠀⠀⠀⠀ So why should we learn to love unprocessed/minimally processed carbs like quinoa, sweet potato, brown rice, rolled oats & legumes? Because along with providing the body with its preferred form of energy, glucose, they are loaded with vitamins, minerals, antioxidants which are required for vital chemical reactions, energy production & help protect the body from disease, ageing and generally stay healthy. They are also rich sources of dietary fibre which is crucial for chronic disease and obesity prevention. On top of that they contain essential amino acids... so don't stress you aren't missing out on protein building blocks. If you are eating a high protein, high fat & low carb diet chances are you are missing out on many important micronutrients & are deficient in dietary fibre. There are no populations who have eaten a keto diet long enough to display that it promotes longevity Vs several populations like the Okinawan's in Japan who live a mainly/ entirely plant based diet. ⠀⠀⠀⠀⠀⠀⠀⠀ For the majority of people I recommend 55-60% of calories from carbs, 25-30% from protein & 15-20% from fat. As you start to understand food better you can easily 'eye ball' this & for most of us there is no real need to count.

Hill's Diet: "Heaps of Hempseed"

Hill splits up his daily calorie intake into a 50/30/20 model. Fifty percent of his daily calories come from carbs in the form of brown rice, quinoa, and legumes like chickpeas; 30 percent comes from protein including soy, organic tofu, tempeh, and beans; and 20 percent comes from fats found in nuts, avocados, and "heaps of hempseed."

“I’m pretty strong on intermittent fasting,” Hill added. That means he eats his meals within an 8-hour window, then fasts for 16 hours a day. Intermittent fasting remains slightly controversial, with at least one study proving it’s no more effective than classic calorie restriction. 

A typical breakfast for Hill — which he eats around noon, since he stops eating around 8 p.m. — usually includes some overnight oats with lupin flakes, almond milk, berries, and hemp seeds.

As for lunch and dinner, Hill enjoys grain bowls stacked with veggies and proteins like tempeh or soy.

"Everything I eat is typically available to the masses,” Hill said.

Intrigued by plant based living and my posts but unsure where to start? ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ Here are my top tips for anyone wanting to look at what they are feeding themselves,& their families, in order to be healthier & minimise the onset of the chronic lifestyle diseases that are killing us at a faster rate than ever (cardiovascular disease, type 2 diabetes, various cancers etc): ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ 1- Try not to identify yourself with the way you currently think. At birth the only food you were attracted to was breast milk, that's all you knew and everything since then has been learned. If you identify with how you eat then you will most likely take all my posts personally and I'm genuinely here to help make you healthier (I too once thought meat was healthy and would make me strong). ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ 2- Eat less animal products - Im 100% plant based but Im a realist and understand it often needs to be a slow transition to make it a forever change in someones life. This doesnt just mean cutting back on meats, but also includes eggs as well as dairy products like milk & cheese. Your cholesterol levels will drop dramatically when you begin to cut out animal products. This along with a reduction in animal protein & animal saturated fats has been shown to give you much less chance of a cardiovascular event. I've posted several Buddha bowls - understanding how to mix & match these is a great starting point & I recommend @coconutbowls Vegan Bowls by Vegan Souls book as a great intro vegan cook book. ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ 3- ⬆️ your legumes, dark green leafy vegetables & fruits, particularly berries. Every day. ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ 4- Ditch overly processed foods where possible. If the shelf life is longer than 3-4 weeks on a 'fridge' item then maybe think about another alternative. ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ 5- Read food labels. Ditch foods with refined sugars, artificial flavouring/preservatives and hidden animal ingredients. Even vegan foods on shelf can be unhealthy. Be a smart consumer. ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ 6- Make sure you get 30-35g of dietary fibre/day. This will help you lower your cholesterol (fibre binds to cholesterol & it comes out in your faeces) & remove toxins. ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ Simon 🙏🏼💪🏼🌱

Hill's Workout: Hitting the Beach for an "in and out"

Hill works out every day because he'd "go crazy" without it, but keeps each session to 45 minutes or an hour.

“I do go into the gym, but I don’t lift heavy like I used to,” he said. Because of his training as a physiotherapist, he likes to create his own moves that are far away from a classic squat or deadlift.

One of his favorite workouts involves hitting the beach with his buddy and MH Action Hero, Tim Robards, to do what's known as an “in and out.”

“We go into the water to about belly button height and then we turn toward the shore," he explained. "Through the water there’s a lot of resistance, so essentially you’re pushing through the water and then sprinting all the way to the backside of the beach."

"It sounds relatively easy, but pushing through the water is really hard," he added. "Just to get the heart rate up.”

They spend the rest of their workout doing soft sand runs for about 4 kilometers — about 2.5 miles — and finish off with some body weight calisthenics.

Hill is also gearing up to launch Plant Proof, a website revealing exactly how he got in shape.
